For those of you that have been asking...

Ta da...
Chicken Enchiladas!!
I got this recipe from my old roommate, Andrea at BYU. She is a fabulous cook! I take no credit for how yummy this recipe is! (Hope you don't mind me sharing it, E!) Enjoy!
1 dozen flour tortillas
4 chicken breasts (cooked and shredded)
3 large tomatoes
1 bunch green onion
1/2 lb. grated cheddar cheese
1/2 lb. grated jack cheese
1 small can green chili
sauce: 1 can cream of chicken soup
1 (8 oz.) container sour cream
3/4 cup milk
2 t. soy sauce
Directions: Fill tortillas with combined ingredients (top). Roll tortillas and place in 9x13" pan. Top with sauce and extra cheese. Bake 350 degrees for 40-45 minutes.
*This recipe makes a LOT for a small family...I usually half it when I make it for our family.

Those days were so much fun! And I got to reap the benefits of E's cooking even longer. I feel bad I wasn't able to give my roomates the same treatment, since I used to try to pull off crazy substitutions if I didn't have something, like salt for sugar (or so Ally would say). Anyway, speaking of food, I've been wanting to ask you for your mint brownie recipe. Those were the best!

Ahhh memories. I love that recipe! I definitely don't mind you sharing it Laura, it's definitely a classic that will stand the test of time! Wow, I can't believe G remembered Budd...wasn't that the night you and Kyle officially "hooked it up"?
