Change of Plan: Weeknight Favorites!
Okay, since people are having a hard time coming up with "rut" recipes, I decided to change it to "Weeknight Favorites." Let me know what some of your favorite dinnertime recipes are. They can be easy, hard, a lot of ingredients, a few ingredients, breakfast or lunch-themed, whatever you want! I'll try to send you something. My problem is those things are usually super quick and I don't have an actual recipe for them you know?
I make quiche alot. Frozen pie crust, 4 eggs, 2 cups of cheese, random veggies. Bake at 350 for an hour.
Okay, Sarah- I just found the recipe blog that you're a part of and you posted some really YUMMY recipes, so no excuses! If you don't want to type something up, just copy one of those! I'm going to try your Mexican Lime Chicken tonight! Yummmm!

Ok, most everything I cook my family is what my mom cooked for me growing up so I am sure you already have all the recipes. But I learned how to make crepes from my neighbor and I really like them. Instead of putting fruit and stuff in it, this recipe uses veggies, meat and cheese. Here you go...
Veggie Crepes
Mix-
1 ½ c. flour
1T Sugar
½ t. baking powder
½ t. salt
Add-
2 c. milk
2 eggs
½ t. vanilla
1T melted butter
If you don’t have a crepe maker then use a nonstick pan on medium high heat. Spray with pam and pour ¼ cup of batter into the pan and tip it in a circular motion to spread batter around so that it is a thin circle. After a minute or so flip it and cook it on the other side like a pancake. I like mine browned and a little more crunchy but still foldable.
Filling-
Ham
Zucchini
Squash
Asparagus
Mushrooms
Garlic
Onion salt
Salt
Pepper
Cheese
(or any veggies you have that sound good)
Cut ham into small pieces and chop the vegetables into very small fine pieces. Heat a pan with olive oil and then add some garlic and then the ham and vegetables. I just use a combination of what ever we have at the time. Sauté the ham and vegetables until the consistency you like. In a hot crepe spread some cheddar cheese over it and then place some filling into it and fold the sides in and enjoy.
Tip- I usually make up the batter and then sauté all the ham and veggies and then set it aside but keep it warm while I make a crepe and then when it is done put the cheese and filling in it so the cheese melts. There are endless possibilities of what you can put in one. I think that anything you can put in an omelet you can put in a crepe. Great for breakfast or dinner.

Here is a REAL recipe since the other one was so quick, and not even right (I forgot the milk)
It is Smoky Chicken Quesadillas

2 C cooked chicken
2-4 T bbq sauce
Tortillas
Cheddar cheese
sour cream
In a bowl mix the chicken and bbq sauce until evenly coated. In a large fry pan make a quesadilla by topping a tortilla with cheese and then top with chicken and then another tortilla. Pan fry on both sides until tortilla is crispy and cheese is melted. Cut and serve with sour cream and home made salsa.
Home made Salsa
________________
4-5 roma tomatoes
1 med. onion
1 handful fresh cilantro
1 jalapeno
Salt and Pepper
Finely dice tomatoes and onion, add chopped cilantro and minced jalapeno. Add S&P to taste. Can be made the night before.
