A Dinner Tale.

Tonight Kyle had to chaperone a Stake Dance at our church until 11pm. So as soon as the kids were in bed, I snooped around our fridge wandering what in the world to have for dinner. With no luck I shut the fridge and opened the pantry - no luck there. With a sigh I was about to pull out the granola cereal, when lo and behold, my eyes came across a ripe avocado sitting in the fruit basket on my counter.

Just the thing!

I set to work mincing fresh garlic, chopping vine-ripened tomatoes and purple onion (with tears streaming down my face!), adding a shot of lemon juice here and a splash of green tabasco sauce there. With a pinch of salt, a sprinkle of cilantro, and a whollop of sour cream to top it, I had a savory guacamole all to myself! (Not that I wouldn't have shared had Kyle been home!)

I found some tortilla chips in the pantry and taste tested my creation realizing I didn't really feel like eating it with chips. So I pushed and shoved all the jugs and bottles and bowls around in the refrigerator until I found the multi-grain tortillas I'd been inspired to buy a few days ago.

I quickly warmed it, filled it with my green goodness, wrapped it up, and topped it with a toothpick so it would hold for a picture. How could I keep this little bit of heaven on a plate to myself?

Having drunken water all day, it was time for a delectable beverage to go with my savory dinner. Why not? The kids were in bed!!!

Rootbeer? Nah. Milk? Nope. Chocolate milk? Naw. Orange juice? ...........Hmmm...orange juice. What could I do with orange juice? ................. Orange julius!

A little orange juice here, a dab of vanilla ice cream there, a splash of vanilla, and 10 ice cubes later all blended to an icey concoction and I was set to go.

I settled on my bed with my meal reveling in culinary delight with each bite and sip while I finished reading my book. It was a night of lonely perfection!

You are so good to spoil yourself. I always just end up with something that takes no effort. I always think I will order something in for me when Joel is on a trip... then I realize that I am stuck at home with 2 sleeping kids and can't go get what I want. Someday maybe I will think ahead.

you are too funny! i do that too, but i NEVER have as good of stuff as you do. so mine ends up being cookie dough without all the stuff in it!!!

Mmmmm, I have been wanting guac so bad lately. Yours looks pretty good.... I think it's been years since I have had an orange julius. How come you never see those places around anymore... so sad!
